This is one of those recipes that I have just kept adjusting over the years until I got it perfect. Well at least perfect for my families’ taste buds. My family loves orzo pasta and they do not even mind that I use whole wheat. There are definitely some whole wheat noodles they do not like so I try to avoid them. The best thing about this pasta salad is that you can add or take an ingredient away easily. I hope you and your family decide to give our pasta a try!
1/2 pound of Orzo Pasta
8.5 ounces of Quartered Artichoke hearts (I do not use the marinade version but you could for a little extra flavor)
2 ounces of Capers
1/2 Large Red Bell Pepper, diced small ( Sometimes I like to use red, orange and yellow bell pepper to give it some color)
6 ounces Feta
2.5 ounces Kalamata Olives
1 tablespoon balsamic
2 tablespoons Olive Oil
1 teaspoon salt
1/2 teaspoon pepper
Cook Orzo pasta according to the instructions, drain and add to a mixing bowl. Then add the remaining ingredients to the bowl and combine. If pasta is still warm then wait to add the feta or it will melt it all.
