WEEKNIGHT DINNER IDEAS

Whether you are a working mom or a stay at home mom we all could use some quick and healthy dinner ideas. I try to once a month go to Costco to buy my organic meat since it is so much more affordable. I usually buy organic ground meat, chicken thighs, chicken breast and whole chickens at Costco. To make my life easier I will either make marinades or buy them. I then divide out the chicken breast and thighs into freezer bags with 4 pieces to a bag since we are a family of 4. I really love these Maven’s Kitchen marinades! Our favorite is the Golden Turmeric Tahini and being able to just dump them into the freezer bag quickly with no work is perfect. After I put the chicken and mariandes (if using the Maven’s Kitchen marinades then I use half the container for 4 pieces of chicken) in the freezer bags I release all the air and refrigerate for 24 hours. After 24 hours I move them to the freezer and I can use them throughout the month. Below I have included some meal ideas for each marinade.

we really enjoy grilling the Golden Turmeric Tahini chicken thighs but I often cook them on the stove top (high heat for 6 to 8 minutes per side) or bake them (400 for 20-25 miuntes or until done). We love to make a fun “Greek Night Board” with feta, Kalamata olives, pita, hummus, stuffed grape leaves, cucumbers, tzatziki dip and the chicken. Our family loves “snack” type dinners and I love this since it is healthier.

Honestly all of these recipes are best grilling in my opinion but I often do not have time to grill so I just bake them. We enjoy having edamame, gyoza and cauliflower fried rice with this chicken marinade. I will be honest and admit I am usually too tired to make the fried cauliflower rice from scratch so I just buy the frozen ones.

The chimichurri marinade really goes best with beef but we like it on chicken too. I love having grilled veggies and salad with this marinade. Also a nice crusty baget lightly toasted is really good with this marinade too.
