With all the cold weather it means I have been making a lot of hot chocolate. We got snow/ice so my kids have been outside playing in it. When they come in freezing and red checked they always request hot chocolate. Of course they love hot chocolate but not from a package. I created a super quick and easy recipe that I have adjusted over the years to suit the taste buds of our family. We like to taste the cocoa more then the sugar but some people may want to adjust the recipe to suit your own taste. If you prefer a sweeter hot chocolate I would suggest changing the cocoa powder from 2 tablespoons to 1 and a half. We also add a little salt because my husband and kids have a weakness for salty things. I also double the salt in my chocolate chip cookie recipe! We add two small pinches of salt but you could eliminate this or just add 1 small pinch. I actually do not measure as I make the hot chocolate since I have made it so many times I can eye it.
2 TABLESPOONS COCOA POWDER
2 TABLESPOONS GRANULATED SUGAR
1 SMALL SPLASH OF VANILLA EXTRACT (IF MEASURING THEN 1/4 TEASPOON)
2 PINCHES OF SALT (OR 1/4 TEASPOON)
2 TABLESPOONS AND 1 1/2 CUPS OF MILK
1. Add the cocoa powder, sugar, vanilla, salt and 2 tablespoons to a saucepan over medium heat and whisk until smooth. I start with just a small amount of milk so that I can get all the ingredients nice and smooth then I add in the remaining 1 1/2 cups of milk. It is that simple!
